Martin Jones, Vice President F&B Asia Pacific, Starwood Hotels & Resorts
Starwood Hotels & Resorts Worldwide, Inc., is the largest upper upscale hotel company in the division, managing nine distinctive brands, including St. Regis®, The Luxury Collection®, W Hotels®, Westin®, Sheraton®, Four Points® by Sheraton, Le Méridien®, Aloft(SM), and Element(SM). In this role, Jones is responsible for all facets of Food & Beverage for the Asia Pacific Division including strategic direction, development of restaurants and bars concepts, F&B operations and quality assurance across all hotel brands. At present, he is responsible for 243 hotels across 18 countries with F&B revenue which account for over one-third of Starwood Hotels & Resorts Asia Pacific’s business.
Prior to this role, Jones was most recently Managing Director – Food & Beverage Asia Pacific. In 2004, he assumed dual roles in the company where he was General Manager of The Westin Kuala Lumpur and Chairman of Starwood Asia Pacific’s Food & Beverage Council. He was also responsible for opening Asia’s first W Hotel, in his role as General Manager for the W Seoul Walkerhill.
He joined Starwood in 1999 and since then, he has been instrumental in leading a number of successful new Food & Beverage initiatives for the Division, including a series of new Restaurant and Bar concepts, Best Breakfast initiatives and various new Food & Beverage programs, as well as the successful launch of Starwood’s dedicated Food & Beverage portal, SPG Restaurants & Bars website – www.spgrestaurantsandbars.com.
Jones still remains the Chairman of Starwood Asia Pacific’s Food & Beverage Council, managing a team of select F&B leaders from regional properties, and the Council is instrumental in the development and rollout of F&B concepts and programs and the subsequent development of Starwood Asia Pacific’s overall F&B strategy. In addition to this, Jones also initiated Starwood Asia Pacific Divisional Food & Beverage Conference called the Next Course Conference in 2007. Last held at Sheraton Pudong Shanghai Hotel in 2011, the conference gathered over 400 attendees from Food & Beverage department in Asia Pacific and industry players to discuss and define the future of hospitality services.
A recipient of the Starwood Business Excellence Award for ‘Most Creative Innovator’, Jones devised Starwood’s ‘Back to Basics’ manual which is the lynchpin to Starwood’s F&B standard – quality and consistency to achieve excellence in the field of Food & Beverage. He was also instrumental in developing ‘Wines of the World’ which is now one of the most successful wines by the glass programs in the industry, which has been running for the past 10 years.
